Lemon Merigue from Strawberry Shortcake

Do you remember Strawberry Shortcake and her friends? They were all the rage in the late 1970s/early 1980s, made a comeback in the early 2000s - and are back again this year! My interest (of course!) is in Strawberry Shortcake's friend Lemon Meringue.

According to Wikipedia, Lemon Meringue was introduced in "Strawberry Shortcake in Big Apple City" (1981). However, other sources list Lemon Merigue as first being released in 1979. Whenever she was designed, though, Lemon Meringue is a primping beauty known around the city as a famous model. When pressed for details, however, she admits that her "pictures" are mostly owned by members of her immediate family. Originally, Lemon Meringue had a frog for a pet, but the Frap has since been replaced with Sourball, the Skunk.

Find MORE Lemon Recipes - and lots of Lemon Books!

After dreaming about the lemon lusciousness of Heavenly Pie yesterday, I decided to see what other lemon recipes were out there. There are HUNDREDS - and they all sound good! Check out some interesting lemon recipes here. The "Luscious Lemon Desserts" just has to be great!

The Absolute BEST Lemon Pie

When I was child, my grandmother lived with us. She was an excellent cook and an even better baker. Apple pies, cream puffs, cookies - you name it, she made it. She had a special deal for birthdays...the birthday girl (or boy) got to choose any dessert they chose. My choice was always her special "Heavenly Pie" - a luscious concoction of sweet meringue, tart lemon and sweetened real whipped cream! I was thinking about that pie the other day (which just happened to be my birthday) and decided I wanted to share the recipe with you. There are many variations of this recipe out there - called Angel Pie, Lemon Angel Pie or whatever - but this is as close to my grandma's Heavenly Pie that I've come! Be forewarned, though - this pie caused many a fight between my sisters and I! We all wanted to be sure we got the biggest piece!

Heavenly Pie

Ingredients:
For Meringue-
4 egg whites
1/4 teaspoon cream of tartar
1 cup sugar

For Filling-
4 egg yolks
1/2 cup sugar
2 teaspoons lemon zest
1/3 cup lemon juice

For Whipped Cream-
2 cups heavy cream
1/4 cup sugar
1/2 tsp. vanilla
1 teaspoon lemon zest

Directions for Meringue Crust:
- Preheat oven to 250 degrees F ( 120 degrees C).
- Thoroughly grease a 10-inch pie plate.
- Beat egg whites until stiff. Add cream of tartar and gradually add 1 cup sugar; beat until glossy. - Spread over bottom and sides of pie plate, building up the sides 1/2 inch above the edge of the plate.
- Place in oven, and bake 1-1/2 hours. Turn off oven, and leave meringue inside to cool slowly.

Directions for Lemon Filling:
- Combine egg yolks, 1/2 cup sugar, 2 teaspoons zest, and lemon juice and cook over medium low heat until thick, stirring continuously.
- Cool thoroughly.

Directions for Whipped Cream:
- Whip cold cream until stiff, gradually adding sugar and vanilla.

Assembling the Pie:
- Place lemon filling in the meringue shell.
- Cover with the whipped cream.
- Garnish with remaining lemon zest if desired.
- Refrigerate.

Not Just for Lemonade! 15 Great Uses for Lemons that You Probably Never Think About!

While lemonade is a great use of lemons, it’s certainly not the only use for these pretty yellow citrus fruits! Lemons play many positive roles – from keeping away annoying bugs to helping you get beautiful skin to keeping you healthy and happy. Here are just a few of the many powers of the luscious lemon!

1. Ant-Proof Your Home – Did you know that ants hate the smell of lemon? Squirt lemon juice on doorways, windowsills, or wherever ants are entering, and you’ll keep them away.

2. Keep rice from sticking – A spoonful of lemon juice added to boiling water keeps rice from sticking together when cooking.

3. Deodorize your garbage disposal – Toss leftover lemon peels down the disposal to make your sink smell lemon fresh.

4. Fight off a cold – Lemons are a great source of Vitamin C. Mix lemon juice with honey and hot water to sooth coughs and sore throats.

5. Highlight your hair – ¼ cup lemon juice added to ¾ cup water makes a natural hair rinse. Just comb the mixture through hair and sit in the sun until it dries. Since lemon juice is a natural bleach, you’ll get blond highlights without spending a fortune!

6. Clean smelly hands – After chopping onions, battering fish or dealing with other smelly foods, wash your hands first in lemon juice and then with soap and water.

7. Eliminate fireplace odor – If your fireplace doesn’t smell as good as you’d like, burn some lemon peels along with the firewood.

8. Remove rust from clothing – one cup of lemon juice in the washer during the wash cycle will remove rust and other mineral discolorations from cotton clothing and leave them smelling fresh.

9. Prevent eggs from cracking while boiling – Just coat the shells with lemon juice before boiling.

10. Make soggy lettuce crisp - Add the juice of half a lemon to a bowl of cold water. Put in the soggy lettuce and refrigerate for 1 hour. Dry the newly-crisp lettuce completely before adding to salads or sandwiches.

11. Deodorize a humidifier –When your humidifier gets that stale odor, pour 3 or 4 teaspoons lemon juice into the water. Repeat every couple of weeks to keep the lemon-fresh fragrance.

12. Remove warts – To remove a wart, apply a dab of lemon juice directly to the wart. Repeat for several days until the acids in the lemon juice dissolve the wart completely.

13. Whiten and brighten nails – To eliminate the yellowing caused by nail polish, soak nails in lemon juice for 10 minutes, then dip them in a mixture of warm water and vinegar. This helps whiten nails – and also helps make them stronger.

14. Smooth and soften elbows and heels - Mix baking soda and lemon juice to make a paste. Rub into elbows and heels for a soothing, smoothing treatment.

15. Stay regular - A few drops of lemon juice added to a glass of warm water drank before breakfast will aid with constipation.
